Stuffed Peppers ( Love These! )

- Cut Peppers Down the Middle and Fill

- Ideas: Ground Beef, Rice, Quinoa, Cheese, Corn, Beans, Tomato, Avocado

- Seasoning: Salt + Pepper, Paprika, Etc.


Veggie Tacos ( My Fave! )

- Tortillas, Bell Peppers, Onions

- Chop Bell Pepper + Onion Into Cubes Depending On How Much You Want

- Sautée Them Into A Pan For 20 - 30 Minutes Until Caramelized

- Season Them With Salt + Pepper As They Cook

- Take Out And Place Into Tortillas And Enjoy!
